Thai Shrimp Salad

Here is a delicious salad I made this week…

Ingredients:

FOR Dressing:

Juice of 2 limes

Zest of 1 lime

1 bunch of cilantro chopped

1 TBSP honey

1 tsp chili pepper flakes

3 fresh cloves peeled & minced

½ tsp sea salt

½ tsp pepper

For Shrimp:

½ pound large peeled, deveined tail-off shrimp

1 teaspoon garlic powder

¼ teaspoon ground ginger

¼ teaspoon kosher salt

1/8 teaspoon turmeric

1/8 teaspoon chili powder

Freshly ground black pepper, to taste

1 teaspoon toasted sesame oil


For Salad:

Bag of cabbage & carrots slaw

Romaine lettuce chopped

Cilantro

Green onions

Avocado - for garnishing

 

Instructions:  

Place all your dressing ingredients in a jar & shake. You could also put them in a food processor & blend until smooth.  

Add your prepped, sliced & diced veggies to a bowl and toss.

Drizzle the dressing over the veggies & toss to lightly coat.

Heat sesame oil in pan over medium heat.  Place shrimp in a plastic bag & add all of the spices listed above.  Seal & shake the bag to make sure the shrimp are coated with the seasoning.  Add the shrimp to the pan & saute 2-3 minutes on each side until the shrimp are pink & done.

Place shrimp over salad and garnish with sliced avocado.  Enjoy!
