Back to School and the dreaded Lunch making process…

It that time...summer is over (sniff sniff) and the kids are headed back to school.  I am not ready.  I love summer and all things summer.  The start of the school year is hard for me for 2 main reasons. Packing lunches. Homework. Bleh. If you are on the struggle bus too, I am here for ya!  I know once the routine starts I will be ok and actually welcome it...but I am gonna complain for a few short minutes.  Because lets be real, 3rd grade and 5th grade are not easy.  Whew.  My brain hurts already.   In order

Zucchini Bread Muffins

This recipe is a favorite at my house.  A lot of times if they are asking for cupcakes I will make this and add a cream cheese frosting.  At least its semi-healthy then, right?! Its easy to mix and makes a big batch.  I like to make it in mini-muffin sizes too and then freeze some.  They keep great & make good snacks or are great for breakfast (pair it with a hard boiled egg & some fresh fruit and YUM!  A great way to start the day!) So here are the players... 3 eggs 1 Cup sugar (FYI I

Sausage & Hash Brown Mini-Frittatas

This recipe has been in my family for a long time.  My sister Jennifer first introduced it to us years ago and it has continued to be a go to breakfast.  It is not dairy-free.  It is not carb-free.  I cook for 2 very hungry growing boys (ages 7 & 10) and carb free isn't a part of our language.  You can however make it gluten-free (my sister has Celiac and this is one of her go to breakfast recipes that the entire family can enjoy)!  I encourage you to double or triple the recipe because these are not only

No Bake Energy Bites

These are easy to make & a crowd pleaser!  My friend Liz gave me this recipe and it is a go to staple for my house, especially during football and baseball season.  Kids and grown-ups gobble these up!  Honestly it will take you 15 minutes tops to make these.  They keep in the fridge for 10 days...if they last that long!   1 Cup Toasted Old Fashioned Oats (toast in oven for 10 minutes at 375 degrees) 1/2 Cup Peanut butter (or any other nut butter, my favorite is Almond Butter) 1/3 C Honey 1 Cup Toasted Coconut Flakes (you

The holidays are quickly approaching!!  I don't know about you, but the holidays to me are a wonderful, magical, and fun time of year. However in then past they also add extra stress, mile-long to do lists, busy schedules which result in less sleep, poor eating and little exercise. This year my goal is to do it differently. I heard a quote recently and it changed my heart. "Keep my hustle holy." There is a lot of hustle in the holidays and I want to keep it holy. I want to relish in the moments with friends & family. I

Drive Thru: Quick, Convenient, Void of Commitment

Max Lucado describes himself as a prayer wimp. I have a similar condition; I suffer from DTB. It is a self-inflicted disease, but curable. Let me give you some background on this affliction and how you too, might be a bona fide Drive Through Believer: Each morning, I pull into the drive through lane at my local fast food emporium for my large Diet Coke and some sort of breakfast item. I get breakfast on the go; it’s convenient to pull up to the window, order, pay, stick a straw in it and dispose of my breakfast dishes once I
