Protein Packed Chocolate Chip Cookie Brownies

A few years ago a friend introduced this recipe to me.  I LOVED it!  It tasted good, was semi-healthy and a little bit went a long way.  I was so excited to share this recipe with some friends who were very health conscientious and were coming over for dinner.   They saw the dessert I had prepared (I baked it in a pie dish, cause I am fancy like that) and were excited to try my new recipe.  I did  not share what was in it until after they had enjoyed a few bites.  They loved it…until they heard it was made from beans 🙂 lol  That was it for my friend Matt…beans, chocolate and a dollop of ice cream are a no go!  We laughed, ALOT!  And the rest of us enjoyed our dessert.

To this day I think of him when I make & serve it.  Its delicious and my kids love it.  Dont let the ingredients scare you.  Give it a try!

The ingredients:

2 Cans White beans or garbanzos, drained & rinsed

1 Cup quick oats

1/4 cup applesauce

3 tbsp oil 

2 tsp vanilla

1/2 tsp baking soda

2 tsp baking powder

1/2 tsp salt

1 1/2 C brown sugar

1 C chocolate chip

Preheat oven to 350. Grease a 9 or 10-inch springform, a 9x9x inch pan, pie pan…whatever you want to make it in, and set it aside. Drain and rinse the beans extremely well. This is important. Combine all ingredients except the chocolate chips in a food processor until completely smooth.  Stir in the chocolate chips. Pour into the pan you prepared.  Bake 35 minutes (may vary depending on the pan you use & how thick they are). Let cool at least ten minutes before removing the springform. The pie will be firm enough to slice, and the texture will be reminiscent of unbaked cookie dough! Refrigerate leftovers 3-4 days.
