These are easy to make & a crowd pleaser! My friend Liz gave me this recipe and it is a go to staple for my house, especially during football and baseball season. Kids and grown-ups gobble these up! Honestly it will take you 15 minutes tops to make these. They keep in the fridge for 10 days…if they last that long!
1 Cup Toasted Old Fashioned Oats (toast in oven for 10 minutes at 375 degrees)
1/2 Cup Peanut butter (or any other nut butter, my favorite is Almond Butter)
1/3 C Honey
1 Cup Toasted Coconut Flakes (you can use sweetened or unsweetened, I prefer unsweetened; toast in oven for 5 minutes at 375)
1/2 Cup ground Flaxseed or Chia Seed (I like to do 1/4 C of each)
1/2 C mini chocolate chips
1 tsp Vanilla
While your Oats & Coconut are toasting, mix the peanut butter and honey in a large bowl. Sometimes I warm it in the microwave for 30 seconds or so to make it easier to mix. Add the oatmeal & coconut flakes. Then stir in all the other ingredients and any other add-ins you want. Roll into balls (I like to use my Pampered Chef small scoop, it makes the perfect size) & refrigerate for 30 minutes. Add-in options: nuts, dates, raisins, wheat germ or cocoa powder.
