Cooking healthy for 2 growing boys can be very overwhelming at times. I enjoy cooking and strive to make healthy homemade meals, however I am often crunched for time when it comes to making dinner…and really, EVERY SINGLE NIGHT?! Thats a lot to expect! Can I get an AMEN?!
So back to my recipe…
These Quinoa Bites have been a HUGE hit in my house and I can’t wait for you to try them too!
Think healthy + easy to make = HAPPY Bellies! They also freeze great too!
There are many different varieties of these quinoa bites, but here is one of our favorites.
Chicken Cordon Blue Quinoa Bites
from “So Very Blessed”
• 2 cups cooked quinoa (I cook mine in chicken broth)
• 2 large eggs
• 2 stalks green onion, diced
• 1 cup shredded swiss cheese
• 2 tsp minced garlic
• 1 tsp dried thyme
• 1 tsp dried parsley
• 3/4 cup finely diced ham
• 3/4 cup finely chopped cooked chicken
• 1/2 tsp seasoning salt
• 1/4 tsp ground pepper
Simply mix all ingredients together in a bowl. Preheat oven to 350 degrees. Distribute mixture into a greased mini muffin tin, filling each cup to the top (I use the Pampered Chef small cookie scoop & a mini muffin pan, however your bites can be bigger & you can use a full size muffin pan). Then press down gently to compact. Bake for 15-20 minutes.
Quinoa Bites are a great dinner, especially when paired with my Asparagus Soup! We have also tried the Broccoli Cheese Bites which are YUMMY, but our favorites are the Buffalo Chicken Bites! For more recipes go to So Very Blessed ENJOY!
