Vegetable Egg Cups

(adapted from 21 Day Fix)

Non-stick cooking spray
12 eggs
2 Cups chopped vegetables – I like mushrooms, red bell pepper & green pepper
2 Tbsp green onions
12 Tbsp salsa (optional)
salt
pepper

Heat oven 375 degrees. Lightly coat a muffin pan with spray. Place eggs in a bowl & whisk. Season with salt & pepper. Add chopped vegetables & green onions. Mix well. Evenly pour egg mixture to all muffin cups. Bake for 15-20 minutes or until eggs are cooked. Top each egg cup with salsa (optional).
